Pandan leaves are widely used in Southeast Asian cooking for its flavor. Pandan is basically Asia’s vanilla bean. Just as we use vanilla in many desserts and food items to enhance their flavor, pandan is used for this purpose in Asia.
Pandan has a nice and light sweetness, and a very pleasant aroma. It is actually used in a lot of different types of foods to improve their smell.
These Macarooz are our take on Buko Pandan, a Filipino dessert containing pandan and coconut. We start with classic shells, and fill them with pandan ganache with a dollop of coconut cream to round out the taste experience.
