How one simple question led to Macarooz’s signature gluten-free dessert.

For years, Macarooz focused on one thing: perfecting macarons.

Every shell was held to an incredibly high standard. Shape, texture, smoothness, color — every detail mattered. If a macaron shell didn’t meet that standard, it didn’t leave the kitchen, even if it tasted perfect.

Behind the scenes, that meant trays of macarons were being set aside every single day. Not because they lacked flavor or quality, but because they didn’t meet the visual standard we believed our customers deserved.

At the time, it felt like part of the process. But over time, one question quietly continued to grow in the background:

What if those imperfections could become something more?

A Moment to Rethink Everything

Then came 2020.

As COVID-19 paused retail partnerships and slowed business across the food industry, the pace inside our kitchens changed too. For the first time in years, there was space to step back, reflect, and experiment.

Instead of looking at imperfect macaron shells as something to discard, we started looking at them differently — as an opportunity.

What if we could transform them into an entirely new dessert experience?

That single question sparked the beginning of what would eventually become the Mac Pop.

Experimenting Beyond the Macaron

The early versions weren’t polished.

There were countless rounds of testing, mixing, dipping, tasting, adjusting textures, and refining flavors. But something exciting started to happen as we combined macaron shells with our signature fillings.

The texture became rich, soft, and indulgent — almost reminiscent of cookie dough, but lighter and more delicate. Once dipped in chocolate, it transformed into something completely different from a traditional dessert pop.

Not cake.

Not a truffle.

Not a macaron in its original form.

Something entirely its own.

And just like that, the Mac Pop was born.

Crafted From Macarons — Not Cake

What made the Mac Pop different from the beginning was its foundation.

Unlike traditional cake pops, Mac Pops are crafted entirely from macarons. That distinction created a texture and flavor profile unlike anything else in the market: rich, smooth, indulgent, and naturally gluten-free.

What started as a creative experiment quickly evolved into one of Macarooz’s signature products.

The first flavors — Birthday Cake, Strawberry, Red Velvet, and Cookies & Cream — introduced customers to a completely new dessert category. Since then, the collection has continued to evolve with seasonal flavors, custom designs, edible printing, and our now-signature Rose Pops.

What began in our kitchen eventually expanded into retail shelves, gifting programs, dessert tables, stadium suites, and celebrations across the country.
